A hotel doesn’t have one F&B operation. It has five.
Restaurants, bars, buffet, room service, banquets and a central store supplying them all. We set up each outlet as a centre, the central store as an internal supplier and accounts the way finance needs them, so food cost comes out by outlet, not as an estimate.
Sound familiar?
- 01
"The central store sends goods to the restaurant and nobody knows at what price."
- 02
"Finance gets an estimate at month-end, not a figure."
- 03
"Each outlet buys on its own, and the group negotiates nothing."
- 04
"The buffet is done by eye. Nobody knows what it costs per cover."
What makes your operation complex
Outlets with different cost models: à la carte, buffet, bar, banquets, room service.
A central store that buys, receives and supplies everyone.
Finance needing every purchase with its account and VAT.
In a hotel group, several properties that should buy the same way.
What we build
Each outlet as a cost centre, with its store, templates and linked POS.
The central store as an internal supplier: it sells to each outlet in the format it buys in, and each outlet orders from it as from any other supplier.
External suppliers in the master account, replicated in the centres that buy from them.
Buffet and menu dishes and costings, with their allergens.
Analysis accounts and VAT for each purchase, aligned with your accounting software.
What your team runs
The central store receives and fulfils internal orders. Each outlet orders, runs stock counts and records production. Finance receives the data.
How a new property comes in
It copies the group’s standard: catalogue, suppliers, accounts and the central store plus outlets structure. We link its POS and PMS if needed, and it starts.
If you already use tSpoonLab
In hotels, what fails most is the flow from central store to outlet: transfers, which move stock but not cost, instead of an internal supplier, and purchases with no store. We review it centre by centre and reconcile what the central store sends with what each outlet receives.
